All week I’ve been thinking and dreaming of this lemon curd oatmeal. I fell in love with lemon curd after trying some of Trader Joe’s version. I’ve heard that lemon curd tastes best freshly made. Unfortunately, I’ll probably never make lemon curd unless I make a vegan version. If I ever go to a restaurant that serves fresh lemon curd, I will definitely order it.
When it comes to my oatmeal bowls, I try to come up with creative combinations. Out of all of the combinations I have made, my absolute favorite is my matcha oats. Whenever I eat matcha oats, I have so much energy. But, I think this lemon curd oatmeal bowl kinda gives the matcha oat bowl a run for its money.
How to make Lemon Curd Oatmeal
This recipe is actually fairly simple. All I did was add some of Stonewall Kitchen’s Lemon Curd. I don’t make lemon curd from scratch because I cannot consume cooked eggs. I know what you’re thinking, stonewall kitchen’s lemon curd has eggs in it. Yes, this is true. For some reason, I can eat foods that are made with eggs. But, I cannot eat cooked eggs. I don’t like to buy eggs because I don’t eat them. And, a lot of the baking that I do is vegan. Lemon curd is amazing, and I don’t want to give it up. In fact, I honestly need to develop a vegan version of it.
Lemon and poppy seeds go very well together. Add some lemon curd on top of a bagel with poppy seeds, and you will be in love.
In addition to the lemon curd, poppy seeds, and pumpkin seeds – I added some coconut yogurt. Yogurt works so well with the lemon.
If you want to kick this lemon curd oatmeal bowl up a notch, add some coconut chips and walnuts! I chose not to add those ingredients because I wanted to keep this lemon curd oatmeal bowl simple.

Lemon Curd Oatmeal
Ingredients
- 1/2 cup Rolled Oats
- 1 cup Water (or milk)
- 2 tbsp Lemon Curd
- 2 tbsp Coconut Yogurt
- 1/4 tsp Poppy Seeds
- 1 tbsp Pumpkin Seeds
Instructions

Cook the rolled oats according to the instructions on the packaging. After cooking, immediately add in the lemon curd, coconut yogurt, pumpkin seeds, and poppy seeds.
